To cut costs and hit massive scale, corporations begin swapping traditional animal fats for cheaper, highly processed soybean and corn oils. 1980s: The Great Purge A misguided "war on fat" forces the remaining holdouts to ditch tallow entirely. By 1990, the authentic, beef-fat-fried chip is replaced by the seed oil standard we see on every shelf today. Today: The Return Tallow Soila brings it back.
